Staff Highlight: Dr. May Rose Dela Cruz

In honor of NPHW, we asked our staff to share one of their favorite family recipes. ​May Rose Dela Cruz, DrPH, MPH is our Director of Health Equity and Research. Below she shares one of her favorite childhood meals and how you can create it with your ‘ohana.

“Eggplants are a mainstay in my tatay’s (father’s) garden. We often had them incorporated into many of our Filipino dishes. My tatay had such a green thumb, and I’m so grateful that he taught me how to plant and care for many of the vegetables we grew in the Philippines. Growing up and cooking the food of my childhood keeps many of the memories alive, and now I share them with my children. This tortang talong dish usually entails grilling the long eggplants on the barbecue grill, but I often place them on my electric stovetop coils and turn them on all sides to get them charred. It was one of my favorite dishes growing up, and now my children also love it!”
